@Gerda de Vos, I spent 12 hours yesterday in my new 1000 square meter garden cutting off the field thistle flowers (Canada thistle), breaking up and crushing the hard earth, removing the weeds (mainly field bindweed and chamomile), and planting potatoes. I need about 90 minutes to plant 1 potato tuber. Can I be ok?
Do I have to use herbicides because of all the weeds?

I do not use herbicides at all. You can cut the weeds so they do not give new seeds. Collect them in a compost pile. Your soil is very poor, it needs to be enriched. I also bury food scraps to make the soil nutritious. Also, to get rid of weeds and enrich the soil, you can plant siderads - useful plants (mustard, Phacelia, Vicia sativa, Pisum sativum, Vícia fába, Ráphanus)
